- 2 cups all purpose flour or a gluten free blend
- 1/2 cup vegan butter, melted
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1 cup plain non-dairy milk
- 1 1/2 teaspoon vanilla extract
- 1/4 cup applesauce
- 1 tablespoon lemon juice
- 1 cup dried apricots diced
- 3/4 cup dairy-free chocolate chips
- 200g dark chocolate, melted
Instructions
- Preheat oven to 180 degrees.
- Lightly grease a loaf pan.
- In a large bowl, combine the flax seed, flour, baking powder, melted butter, salt, and sugar and mix well.
- Make a well in the center of the dry ingredients and add the non-dairy milk, vanilla, applesauce, and lemon juice. Mix until completely combined.
- Fold in the dried apricots and chocolate chips. Pour into prepared pan.
- Bake 45-55 minutes or until toothpick inserted in center comes out clean.
- Spread the melted chocolate on top of the loaf cake. Let it cool for 10 -15 minutes than carefully turn out from loaf pan. Slice and enjoy.
