Chocolate and Apricot Loaf Cake

    • 2 cups all purpose flour or a gluten free blend
    • 1/2 cup vegan butter, melted
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 3/4 cup brown sugar
    • 1 cup plain non-dairy milk
    • 1 1/2 teaspoon vanilla extract
    • 1/4 cup applesauce
    • 1 tablespoon lemon juice
    • 1 cup dried apricots diced
    • 3/4 cup dairy-free chocolate chips
    • 200g dark chocolate, melted


      1. Preheat oven to 180 degrees.
      2. Lightly grease a loaf pan.
      3. In a large bowl, combine the flax seed, flour, baking powder, melted butter, salt, and sugar and mix well.
      4. Make a well in the center of the dry ingredients and add the non-dairy milk, vanilla, applesauce, and lemon juice. Mix until completely combined.
      5. Fold in the dried apricots and chocolate chips. Pour into prepared pan.
      6. Bake 45-55 minutes or until toothpick inserted in center comes out clean.
      7. Spread the melted chocolate on top of the loaf cake. Let it cool for 10 -15 minutes than carefully turn out from loaf pan. Slice and enjoy.
